Honey Roasted Pumpkin Spice Almonds.

By now, you’re probably all out of granola huh? Good thing I have another snack recipe for you! Enter: pumpkin pie spice almonds. Because helloooooooo?! Pumpkin. Pie. Spice. Almonds!

I hate to break it, but these nuts don’t actually have any pumpkin in them. They’re great for a easy crunchy sweet treat, though. Honey and almonds are totally health food, too, so there that.

These babies were difficult to take pictures of since the honey makes them so glossy, but I promise, they’re yummy. The pumpkin pie spice isn’t overwhelming – just enough to make them taste like fall.

Ingredients

  • 1 cup raw almonds
  • Scant 1/8 cup honey
  • 2 tbs pumpkin pie spice
  • Dash of salt

Heat honey in the microwave until just warm, about 20 seconds. Pour honey, pumpkin pie spice, and salt over the almonds and stir to coat. Spread almonds on a greased baking pan and roast in a 350 degree F oven for about 15 minutes, stirring halfway through. If you start to smell the almonds/honey very strongly, take the pan out of the oven immediately. At this point, it’s best to make sure the almonds are separated as they cool so they don’t stick together and become brittle-like. Or not. Who am I to tell you what to do?
