Oh yeah. You read that right. Banana. Bread. Granola.
Banana bread is a favorite of mine, as is granola. It as only a matter of time until they merged, right? Right.
There is really not much more to say, other than you need to make this so your home will smell like banana bread goodness, without making banana bread. Here’s how it’s done:
1 medium very ripe banana
2 cups oats
1/2 cup walnuts
1/4 cup almonds
A dash of salt
1/2 teaspoon cinnamon
1 tablespoon coconut butter
1/4 cup maple syrup
Preheat oven to 300 degrees F. Combine oats, walnuts, almonds, and salt in a large bowl. Mash banana well in a separate bowl. Add coconut butter and maple syrup and microwave for about 30 seconds, until coconut butter is melted. Evenly coat oats/nuts with banana mixture and spread onto a rimmed baking sheet. Bake for about 20 minutes, until just golden, stirring every 5 minutes or so, so that the granola bakes evenly. Cool to room temperature, then store in an airtight container. Adding dried banana chips to the baked granola would be great too.
